The combination of lavender flowers and blackberries is unusually delicious…with a hearty crumble topping, this dish is perfect for Sunday brunch with a fresh cup of coffee.
2 cups organic blackberries
2 tablespoons lavender flowers
¼ cup + 1 tablespoon organic light brown sugar
¼ cup organic all-purpose flour
½ cup organic rolled oats
¼ cup shelled pistachios
1 teaspoon salt
4 tablespoons organic unsalted butter cut into ½ inch cubes
Preheat oven to 375 degrees. Butter two 5” ceramic dishes and place on a baking sheet. Gently mix blackberries with 1 tablespoon brown sugar and lavender flowers. Add to ceramic dishes.
To make the crumble topping:
In a separate bowl, mix all other ingredients with your hands. Once well blended, place the crumble atop the blackberries. If you prefer a less substantial crumble, cut the recipe in half.
Bake for 25 minutes. Let cool for 15 minutes before serving.
